In the documentation (Coverage lists - Docs) I’m seeing Profile A and Profile B. What is the difference between A and B?

Each SIM card has a roaming profile which allows the Thing to connect to specific networks around the world. The link (Coverage lists - Docs) you shared shows an overview of all supported networks for both profiles.
In addition to differences in supported operators, there might also be a difference in price to access specific networks around the world.
